Dr. A's 2-Step Chili
Ingredients:
2T veg. oil
3 lbs. boneless beef chuck (I subst. 1-2 lbs. browned and seasoned gr. beef)--cuts cooking time down to minutes
1 can (14.5 oz) 1 c reduced-sodium beef broth
2 crushed cloves of garlic

1/2 c medium heat chunky salsa
2T chili powder
1 t dried oregano leaves sour cream (opt)
chopped green onions (opt)

Preparation:
1. Heat oil in a dutch oven or large pot over medium heat until hot. Brown beef in batches. Return beef and accumulated juices to dutch oven. 2. Stir in tomatoes, broth, garlic, salsa, chili powder, and oregano. Bring to a boil; reduce heat to low. Cover and tightly simmer 1 1/2 to 1 3/4 hrs, until beef is tender. Serve with sour cream and green onions, if desired. NOTE: I usually get 2. started, and then, while that's simmering nicely, I brown my ground beef. I season the beef with garlic salt, black pepper, and soy sauce (low sodium). Once that's done, I drain the beef and add it to the sauce. Also, I add a small can of sliced black olives and a chopped portabella mushroom to it. SURE IS GOOD! :) Prep/cook time: 2 hrs. (original way) 25-30 mins. (my way)
