Hi!

You all are such a huge help that I knew I could get some good ideas with this...

My office is having a spring food day, and I need to bring a dessert. I was going to make the peanut butter cookies that are noted in the the low carb section but I couldnt find any Kraft Peanut Butter anywhere around here. It was basically a jar of the PB, 1 cup of Splenda and an egg.

Does anyone know a variation to this so that I can still make it and have it low carb or any other EASY ideas??? I want to be able to have some that day too! But it must be a dessert. Thanks!!!!

I've never tried these, but they sound good. Can you find any Natural Peanut Butter (any brand). It is fairly low in carbs. You could just roll them in balls and chill too, kind of like a truffle.

Peanut Butter Cups

8 oz. Cream Cheese (8-carbs)
1 Stick Butter (0-carbs)
4 Tablespoons Cocoa (4-carbs)
2~4 Tablespoons Peanut Butter (8-carbs)
15 Packets Splenda (15-carbs)

Put cream cheese and butter in a microwave for 1 minute to soften. Blend all ingredients. Spoon into paper cup liners and chill.

Servings: 16
Total Carbs: 39 / 2.5 carbs per serving size

How about fresh strawberries and dip?

You could make a whipped cream, cream cheese, or chocolate dip.

If you use Peanut Butter on a regular basis, just use whatever you have on hand. I keep some of Trader Joe's own brand of organic PB around as I have a teenager who eats it every so often. I saw this post earlier and got to thinking about KPB; I had never heard of it. I went to the Kraft website and found that KPB is sold in Canada. The poster who listed the recipe is probably from there.

It probably would be kind of hard just to eat one of these!

Strawberries dipped in creme fraiche is very good.

Hi Danielle,

You might want to try the peanut butter cookies yourself before you test them out on non-low carbing party guests. They aren't bad, but they are definitely not like real PB cookies in my opinion.

Kari's suggestion for strawberries is always a hit. One of my favorites is to wash and hull fresh, red, ripe strawberries and cut them in half. Mix softened cream cheese with some DaVinci Sugar Free Vanilla syrup to taste. Mix it well and spoon about 1/2 tablespoon into each strawberry half. For a really pretty dessert, pipe the cream cheese into the strawberries with a star tip. They are sooo delicious and very attractive. I've served these many times to low-carb skeptics who loved them. It's my little secret. :wink:
