 Post subject: Fauxtatoes too wet!

I want to make some of the cauliflower potatoes for easter dinner. I made them twice before. The first time they were OK the second time they were wet & nasty. I used frozen cauliflower both times. I drained out as much water as I could, I even put cheese in them the second time hoping that would soak up some of the water. Any suggestions?

In all the years I have been cooking, I don't remember ever buying frozen cauliflower. That being said, when I make the caulitaters, I use fresh cauliflower. I steam mine. I just made some last weekend and it wasn't runny at all!!

I have a Kitchenaid sitting on my counter which I very seldom use, but for this dish, I put all the ingredients in it and stir (blend) them. Some people puree the mixture, but I don't like it that way.

I would say buy fresh too just made it the other day and it was great not runny or wet at all.

I have used frozen cauliflower to make that recipe and I use very little water to cook them in the microwave and then put them in a colander and press the water out with paper towels. Hope this helps

I always use frozen cauliflower but I always steam in the microwave. Never had a problem with too much moisture.

I bought a 'steamer' from Tupperware and LOVE IT!!! Worth every penny!!!!! I use the frozen cauliflower and turns out perfect every time when I make my "Cheesy Potatoes". :D

I've made them a couple of times. The first time they were too "wet". I think I processed them too much. I think I used the blender and got them smooth as mashed potatoes? The second time, I used my mixer and left them a little chunky. They were absolutely perfect. I used fresh cauliflower the first time, and frozen the second.

Try them again. It's really worth it when you get them right.
