 Post subject: NEW CAULIFLOWER RECIPES

Here are the recipes I mentioned in another post. I haven't tried them yet, they were in my local paper.

SMASHED CAULIFLOWER WITH JALAPENO AND CHEESE

1 Large head cauliflower (about 2 lbs) trimmed and cut into florets
1/2 cup grated Mex manchego or shredded Jack cheese
1 jalapeno chili, seeded & chopped
2 to 3 tbs heavy whipping cream
Salt and freshly ground black pepper to taste
2 TBS minced fresh cilantro OR flat leaf parsley

Steam cauliflower in a steamer basket over 2 in simmering water until just tender, 12 to 15 min. Drain. Place in a food procecessor fitted with metal blade, along with cheese, chili and 2 TBS cream. Pulse until blended. Taste and add salt and pepper. I needed, add an additional TBS of cream to get a smooth consistency. Transfer to heated werving dish and sprinkle with cilantro. 6 servings. 101 calories, 6 grams 5o5al fat, 9 grams carbs, 6 grams protein

CREAM OF CAULIFLOWER SOUP

1 TBS extra virgin olive oil
1 cup chopped onion
1/2 cup chopped red peppers
1/4 cup chopped celery
1/4 tspp crushed dried thyme
4 cups chicken broth
1 pound cauliflower florets, trimmed and chopped
1/3 cup heavy whipping cream
1 cup half and half
salt and freshly ground black pepper to taste
Chopped parsley for garnish

In large pot, heat oil over med heat
Add onion, bell peppers and celery and saute until vegetables are limp, about 5 minutes ,
Stir in tyme and broth. Add cauliflower, cover and cook until tender, 5 to 10 min.

Transfer to food processer in two batches and puree until smooth.
Return soup to pot and stir in cream and half and half. Season with salt and pepper.
Heat soup through, not letting it boil.
Ladle into soup bowls and sprinkle with parsley. 8 servings
per serving: 139 calories, 9 gr fat, 8 gr carb, 8 gr protein

Enjoy and let me know how you like it. I'll be trying the first recipe tomorrow!

Thanks Jacki for the recipes. I just printed them out!

They sound yummy.

I especially love anything with "Mexican" flavor!!!! \:D/

Did you see the horrible typo I made and just discovered and corrected! Good Grief, it looked like I changed to another language for a sentence :oops: :oops: If you like anything Mesican do you know what Mexican manchego is?
