I was just thinking about my garden this year and looking forward to canning some vegetables later on. That got me to wondering about canning my jams and jellies. Can I use granulated splenda instead of sugar in my recipies? Actually, I know I can use it..... I was just wondering if I could expect the same results and if it would preserve safely and as long on the shelf?

I would email the folks at splenda. I have emailed them before and they are pretty prompt about responding.

I agree with more4less!!! I think you should contact the folks at Splenda. I home can every year, and since starting on this WOE, I plan on canning with no sugar, or using splenda if needed. I usually just can tomatoes, green beans, and peaches, and I think I can get by with not using any sugar at all for those.
Let us know what the Splenda company tells you, I might try to can some S/F jellies/jams this year too!!!

I emailed the Splenda company just a few minutes ago..... I'll let you guys know what they say when I hear from them.

You might have a problem with them not gelling properly. It's very difficult to find pectin without sugar. I found some at a health food store that uses a calcium additive, and requires no sugar.

What an excellent question! We just moved to a property with 2 cherry trees and a plum tree so I am very interested in the response from Splenda. I will also probably be asking all you experts for advice once the fruit is ripe because I have not done much canning before. No excuses anymore!

I just thought I'd let you guys know that I haven't forgotten about you..... I just haven't heard from Splenda yet. I emailed them Saturday morning; I wonder how long it should take them to reply.
