 Post subject: One minute flax muffin?

I am out of splenda packets & was wondering if any of you have ever tried using DaVinci syrup in this muffin recipe? I'm guessing it might affect the consistency of the muffin.

Back when I was looking, I googled it and found an old thread on another board. People there were adding cocoa, syrups and even garlic/onions to theirs.

I have to pop in and warn you, though, they are addictive. I had to quit making them because I started wanting 2 or 3 a day.

It read: SF sweetener OR 1 TBS SF syrup

I am one of the fortunate ones with the OMM, it never set off cravings for me and I had no trouble stopping at one. HOWEVER... I never found the really really RIGHT way for me to make them, you know, with just the right taste, so it's pretty much not an issue.

I made all my flax muffins with SF syrup.

I think I replaced most of the water with flavored syrup. I used Almond Roca flavored syrup. We liked that the best.

I can find the actual adjusted recipe if you want it. Just let me know.

well now hold on the recipe I have is for a full batch do you mean to tell me there is a quick and easy way to make a single portion????? Do share the wealth please. And I always used syrup in mine.

Here you go Marci...I havent made one yet, but everyone says they're great. I'm not sure who came up w/ the recipe. Enjoy!

One minute muffin:

serving size: 1

1/4 cup flax meal
1/2 teaspoon baking powder
1 packet splenda
1 teaspoon cinnamon
1 large egg
1 teaspoon butter

Put dry ingredients in a coffee mug.

Stir.

Then add the egg and butter. Mix.

Microwave 1 minute or more. Take out, slice, butter, eat.

I love these. I don't bother with the Splenda at all. I use 1/2 tsp. of cinamon and 1/2 tsp. of the baking powder. They are so good when they pop out of the microwave with the drizzles of butter streaming through the muffin. I cut it in half and put a bit of cream cheese on top. I even take half a muffin with cream cheese to work for lunch. It's good.
Because I make one of these most mornings, I keep the bag of flax seeds and the other ingredients (and measuring spoons) in a basket. I just pull it out of the refrigerator each morning.
I used to have an easy/few ingrediets recipe for raspberry/flax seed muffins. I can't find it. It was from our old recipe link. If anyone has it, I'd be grateful to see it posted! :)

I was thinking of preportioning in baggies but I like your idea too. Just seems with starting school and getting to the gym eah morning that I don't have time for a lot of simple stuff like emasuring lol.

Ok, so I finally tried the infamous muffin.. & I found it to be a bit strange, yet edible. How do you guys know when it's done? I microwaved mine for a minute & a half to be safe. Also, when I took mine out of the mug, the bottom was damp, but it dried up once it was out of the mug...is that normal? I couldn't figure out if it was just from the steam or if it was undercooked :oops:
