I think the sweetener thing is all dependant on your taste. If I were using garlic, I would not add any at all.

I am not sure what I would do in the oven..It rises so much but that is probably a microwave thing. I guess I would bake just like a regualr muffin and only fillthe muffin pan half full.

I wonder if it would be not as moist if baked in the conventional oven.

Gooch, I never melted the butter. Just mixed it in but made sure it was really soft. It stirred right in with a fork. I alos used Pam on the cup.

I never stalled while eating these. I think people get in trouble with them for two reasons..

#1. portion control

#2. Adding things like cream cheese as a topping on them...

I tried it in the oven, and it was ok. Not just really moist, and it didn't rise a lot, but still it was good.

I put in a few frozen blueberries which were nice.

I divided it and put it in two small Wilton mini cake pans, so I would have two to eat.

My flaxseed may not have been the freshest. I will try a new package next time. I would rather have it fresh ground instead of just the meal that has been in the package.

Okay - so why would anyone stall if they only had one a day? What are in these things that would cause a stall?

Lets take me for instance. I make as directed using either liquid splenda or sf Da Vinci for breakfast every day - or most days and only use butter as a topping. Now I will eat the entire thing but only one ...

Okay - thre ya go - normal ingrediants, one a day - what's in there to stall??

I stalled when I added cottage cheese. Everyone's body reacts different to different foods, I guess.

Some people react badly to artificial sweeteners, too.

I think that you should just be aware that if you add something new to your diet and you stop losing that the new food should be considered a suspect.

:twisted: I couldn't resist. This was so amazing. Six ingredients and =muffin! So I tried it using almond meal instead of flax meal. I also tried it using a Tablespoon of cocoa instead of cinnamon. It would not be wise to eat this almond cupcake often but...I think I now have a birthday cake!

I know I'm a little late to the party on this one but I just wanted to comment about the stalling issue. I ran this recipe through a recipe analyzer to get the nutrition facts so that I could put it into Fitday and here's what it told me:

Calories 340.0
Calories from Fat 226.8
Fat 25.2g
Cholesterol 222.0mg
Sodium 111.0mg
Carbohydrate 18.6g
Dietary Fiber 11.9g
Protein 13.5g

25.2g of fat and 340 calories for the whole thing! Hello stall!!! :shock: I know Atkins says not to focus on the fat and calories but personally I find that it works best for me if I keep it low carb AND low fat.

However, the recipe posted in this thread got me these results:

Calories 233

Total Fat 18.8g

Cholesterol 222mg

Sodium 100mg

Total Carbohydrates 11.4g

Dietary Fiber 9.3g

Protein 12.4g

There are several different versions of the one minute flax muffin floating around though so that could account for the difference in Nutrition Facts.

Mug muffins will come out steamy but dry almost immediately--like before you can find the butter dish ☺. I cook mine for two minutes but even at 1 1/2 min they are cooked. Sometimes they get an air pocket at the bottom too. I have tweaked the recipe numerous times. My usual is 3T flax meal +2T oat bran +1T oil +a drop of liquid splenda +a scant teaspoon baking powder. Sometimes I add a few drops of vanilla flavor. The oat bran does have a few carbs but it seems to improve the texture and flavor and I eat only 1/2 the muffin daily either for breakfast or as an evening snack. cj

total carb 11.7g
fiber 9.3g
net carb 2.4g
protein 12.4g
