 Post subject: Broccoli Cheese Soup

Broccoli Cheese Soup

3 cups cooked chopped Broccoli (you can use frozen)
4 oz. cream cheese
3/4 cup Heavy cream
3/4 cup water (eyeball it, might take more)
Chicken soup base
Pepper to taste
4 oz. shredded cheddar cheese

Combine Broccoli, cream cheese, heavy cream & 1/4 cup water in food processor. Blend until smooth. Transfer mixture to pot add soup base, pepper and rest of water. Simmer over medium heat. Add cheddar & stir until melted

This is not tried tested and true. But it looks good

I think this would be good with cauliflower too. Or a combination of both. With cauliflower, italian sausage (cooked and crumbled) or bacon crumbled, would be a good addition.

Hmmm Chicken soup base??? Would that be like bouillon cubes? I think I would change that and use canned chicken stock in place of the water and chicken base???

I will try this as I am hankering for some soup. It makes good lunches.

Yes it in place of cubes. I can buy the soup base in bulk and find it much cheaper.

Some has starches though, one has to watch

Hi all.
I have just made this soup recipe i used chicken stock and no water. It was good i like this kind of soup with lots of white pepper sprinkled on top. Good and warming.

I have made almost this exact soup by playing around in the kitchen. It needed thickening to me so some cauliflower cooked until it was very tender, pureed in the food processor with a little chicken broth and cream was perfect to add. The cauliflower tastes so similar to broccoli that you will not even know it and it give the soup such a heartier texture.
