 Post subject: Cheeseburger Meatloaf

Cheeseburger Meatloaf

2 pounds ground beef
2 tablespoons tomato sauce
1 tablespoon mustard
1/2 cup minced onion
2 eggs, beaten
1 1/2 teaspoons salt
1 1/2 teaspoons ground black pepper
3 cups shredded Cheddar cheese

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, combine the beef, tomato sauce, mustard, onion, eggs, salt and pepper, and mix well. Pat out meat mixture into a 14x18 inch rectangle on a piece of wax paper. Spread cheese over the meat, leaving a 3/4 inch border around the edges. Roll up jelly roll fashion to enclose the filling and form a pinwheel loaf. Press beef in on both ends to enclose the cheese. Place in a 10x15 inch baking dish.

Bake in the preheated oven 1 hour

The local grocery has their really good ground chuck on sale so I'm stocking up. It hasn't been on sale for ages. So, I'm looking for different things to cook. This one looks good, although two pounds will make alot of meatloaf. I may make two one pound ones and freeze one.

Thanks Noxzema for so many wonderful recipes.

I made this 2 nights ago and it was delicious. I used sea salt instead of regular salt and used 1/3 cup crushed pork rinds for a filler.

Can't wait to make this again, I think the mustard gives it that extra kick. :D
