 Post subject: Smelt - Suggestions?

Okay - the normal recipe for this is flour, salt n pepper to taste .... there is a real fine coating of flour, so should I worry about it, or does anyone have an idea for a replacement...?

What about using ground Flax seed? Flax seed meal. It's a free-bee carb as the fiber equals the carb count. Or, almond flour? Or smother the smelt with egg and roll in ground up pork rinds for a crunch?
