This is simple, but it was so delicious that I had to come here and immediately post it!
Ingredients:
1 green tomato
1 egg
1/4 cup almond flour
1/4 cup parmesan cheese (Powdered kind)
dill
canned tuna
mayo
olive oil
salt and pepper to taste
Slice the green tomato into thick slices and lightly salt. (Or season with Mrs. Dash if you are on low sodium.) Beat egg to make an egg wash. (I just used the white.) Mix parmesan cheese and almond flour together. Double-dip each tomato slice in this order -- flour mix, egg wash, flour mix. I patted mine down into the flour mix on the 2nd dip so it had a nice thick coating on each side. Heat olive oil in a nonstick skillet and brown these on each side.
I topped these with just regular old canned tuna, which I drained very dry then mixed with mayo and dill to taste. Fresh cracked black pepper on top and then serve. It was so yummy that now I want the same thing again for dinner!
Crab would also be a good alternate for the tuna and maybe a little fancier if you are serving for guests.
17g carbs net (21g - 4 fiber) if you eat the whole tomato
You could probably cut the carbs by using all parmesan but I did not because I also limit my salt intake.
