Beef and Broccoli
Serves 6
1/2 cup soy sauce
2 tbs lemon juice
1 tbs cornstarch (I will leave this out)
1 tbs dark brown sugar (I will use a packet of Truvia)
1 clove garlic, crushed
1 tsp black pepper
2 tbs vegetable oil, divided
2 pounds steak or other beef sliced thin
1 medium onion sliced thin
2 medium heads broccoli
2 tsp grated fresh gingerroot (I'll use 1 tsp powdered)
In a small bowl, combine soy sauce, lemon juice, cornstarch, sugar, garlic and pepper..set aside.
Add 1 tbs oil to a skillet or wok over medium high heat and stir fry the beef. Transfer to a plate and cover to keep warm.
Heat remaining oil in skillet or wok and add the onion. Stir fry for 5 minutes. Add the broccoli florets to the skillet with 1/2 cup water. Bring to a boil, cover, reduce heat and simmer for 3 minutes.
Return beef to skillet with soysauce mixture, add ginger. Reheat all for 2 minutes.
I will make brown rice for the kids to eat with this. I'll just eat it plain.

This turned out very nice except I might back off a little on the powdered ginger. I'm going to try this again using chicken. It tasted just like something from the chinese restaurant.

That sounds really good, Donna!
I always keep some gingerroot in my freezer. I just put a whole piece into a ziploc and toss it in there. When I want some, I just grate it with one of those fine-toothed handheld graters. The skin stays on top so no need to peel it first. Just an FYI!
I also keep the jarred stuff on hand - it's like jarred garlic - just dip in and getcha some! ;)

I made this tonight. It was good! I used my wok, and didn't add the water--just stir-fried the broccoli until tender. I used a bit of Thicken Not Thin instead of cornstarch. I used erythritol and 1/8 t. blackstrap molasses to recreate the brown sugar.
