One atkins question and one that is very not atkins...
I was making a decadent cake for DH today that called for coconut milk. I noticed that it only has 2 carbs in 1/3 cup.
Does anyone have any suggested legal uses for it?
2nd question. The cake also called for cream of coconut. I know that is a million carbs but...Can you freeze that stuff? Or, does anyone have a recipe that uses it up? I had to open a whole can and only needed 2 Taablespoons.
I can feed non-legal stuff to DH.

Patty, coconut milk is great stuff - I've added it to my tea instead of cream, also have used in a pinch in my coffee but I still prefer heavy cream for THAT! ;)
You can use it in smoothies, puddings, ice cream, really anyplace that calls for heavy cream.
As for the other stuff - not sure - but I don't see why you COULDN'T freeze it - I know other people freeze the coconut milk in ice cube trays and use the frozen cubes to thicken up a smoothie or shake.

Thanks Char. I was hoping you would chime in.
I have it in the freezer (coconut milk) right now. I will use it for a smoothie kind of thing.

I believe I got this recipe from a local Thai restaurant. So I don't know carb counts.
Chicken Satay:
Ingredients:
2 lbs chicken breast
1/2 C coconut milk
1/4 C cilantro
1 t curry powder
1 t turmeric
4 t splenda
1 t soy sauce
1/4 C oil
10-12 skewers -- be sure to soak them so they don't burn
Directions:
Cut chicken into strips or buy boneless/skinless tenders
In a large bowl combine all ingredients Except chicken
Once all ingredients are combined add chicken and make sure it is thoroughly coated
Let soak preferably overnight covered in the fridge
Take chicken and "thread" onto skewers (this step can be done prior to placing them in the fridge)
Using a George Foreman or indoor grill -- Grill until done
Enjoy
I also make cucumber salad with mine:
Ingredients:
2 C cucumber sliced
1 1/2 C Water
1/4 C granulated Splenda
1/3 C Vinegar
1-2 Shallots
Directions:
Combine and refrigerate overnight.
Serves 8

The recipes on Linda Sue's site for chicken satay, cucumber salad and peanut dipping sauce are simply OUTSTANDING. Just really, really delicious. Both the chicken and the peanut sauce use coconut milk as one of the main ingredients. Check them out--they are delish!
