Restarted today and love eggs,any new recipes to make eggs different so I do not get bored,Thanks.

This isn't exactly a recipe, but I found a quick and dirty way to make eggs that are sort of like a poached egg. I spray a small bowl with Pam, break an egg in it, COVER IT !!! and then nuke it for 30-40 seconds. You'll have to experiment with the number of seconds.

Don't forget the COVER IT !!! part or you'll have egg all over the inside of your microwave.

This is a favorite of my DH's. I make this for him and he eats it for breakfast all week long. I don't use as mush cheese as the recipe calls for and he still says it's great.
