This is a take on the mock danish.

I use frozen strawberries (I think Wyman's is the brand I have here). Defrost them for about 3 minutes, then cook on high for 30 seconds. Sprinkle with sweetener (I think this is optional but I do sprinkle some splenda over mine). Then mash it up and stir it some.

Make the mock danish. My recipe is to microwave 2 oz of cream cheese for 20 secs. Stir until smooth. Add an egg, stir again until it is smooth. Add 1/2 tsp vanilla, sprinkle of cinnamon and sweetener (I use about 1/2 packet of splenda...I don't like it too sweet). Cook until done (set, not mushy...for me this is 1 min).

Pour the strawberries over it. :D

I don't have this too often...usually on the weekends once in a while.

I hate the taste of eggs and I'm not fond of the mock danish. But that sounds like it might hide the egg taste! I may try it--I do get tired of bacon and hamburger patties.

Okay..if I dont use the strawberries (since I am on Induction) do you think this will work?

I also have davinci sf vanilla syrup if that would be better than reg vanilla ... whatcha think?

Jennifer, I think that would be ok. There is another topping that is induction friendly. I don't recall it exactly but it is a little melted butter, sweetener and some cinnamon that you can drizzle over the danish.

I do use regular vanilla usually. I have some of the sf syrup but forget I have it usually. lol :roll:
