I just bought a ton of chicken breasts... Boneless & skinless... They seem to be a fair size.. 2 to a package...

There are hundreds of good recipies out there, however I am looking for the easy way out..

I generally pound them out, sprinkle them with herbs and spices and pan fry them in EVOO...

Any other suggestions???

Steve, I saute some onion and maybe a quarter of a green pepper in olive oil. Season the chicken breast any way you like, drop them in the pan. Open a can of Hunts tomato sauce (very low carbs and no added sugar) pour over the chicken, add a quarter of a cup of red wine, cover and let simmer. Depending on the size of the chicken, it takes no time at all.

Edited: Oops. Missed the "easy way out part." Maybe someone else might like these recipes:

I like the FInger Lickin' Chicken recipe:

4 or 5 chicken breasts
6 Tablespoons Mayonnaise
2 Tablespoons Lemon Juice
1 Tablespoon Vinegar
2 Teaspoons Salt
1 Teaspoon Pepper

Mix mayonnaise, lemon juice, vinegar, salt and pepper in a bowl. Pour over chicken. Cook on 350 for about an hour or until browning on top. I know this sounds strange but it tastes like KFC without the crust!!

(I go a little heavier on the pepper.)

Of course, you can do the "Heroin Wings" recipe with just about any kind of chicken:

4 lbs. Chicken wings
1/2 c. butter
1 c. grated parmesean cheese
2 tablespoons dried parsley
1 tablespoon dried oregano
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon pepper

Preheat the oven to 350. Cut the wings up into drummettes and freeze the pointy tips for soup.

Combine the grated cheese and the seasonings. Line a shallow baking pan with foil. (Do NOT omit this step, or you'll be scrubbing the pan for the next 2 weeks!)

Melt the butter in a shallow bowl or pan. Dip each drummette in butter, roll in the seasoned cheese, and arrange in the foil lined pan. Bake for 1 hour. Kick yourself that you didn't make a double batch!

NOTE to Linda'sa recipes...I cut the salt in the finger lickin chicken...I think it is very salty.

Mix grated parmesan (green can) cheese with one envelope of good seasons italian dressing mix. Dip chicken breasts in water, then in Parm mixture. Place on foil lined baking sheet. Spray breasts with Pam or a light mist of olive oil if you have a mister. Bake. This has a few carbs and you shouldn't make it if you are at all sensitive to the sugar in the mix but it has never made me gain or crave....



There are 8 carbs in one envelope oif dressing mix. But if you use it on 4 chicken breast it comes to 2 carbs per breast...and I think it is less than that as I always have parm mixture left over.

I wouldn't know about the salt. I always leave salt out of any recipe I make. We've just gotten used to low salt foods. I think I'm only on my third box of salt and we've been married over 44 years!

Thanks very much for the ideas..

Last night, I tried to invent something and it worked out perfectly.. I hammered the breasts in saran wrap to flatten them. Added some spices. In a pan, I put some EVOO and some worchester sauce. I let the sauce boil and reduce. I added the breasts to the pan and lowered the heat to med-high. Turned the breasts after only a few mins. Poured some of the remaining thick sauce over the breasts on serving..... They were simply delicious...
To go with them, I made the mushroom, onion, cream sauce... Princess thought it was the best meal she had that day... Wants that again!!!

Coleslaw was the veggie.....


PS.... Since we are married, I am still on the first box of salt and it is almost full....
