Since we no longer have our recipe link, I thought maybe I'd try to create a thread where we could post our favorite recipes. We should probably try to keep them in categories, don't you think. And maybe only one recipe per reply?

Let's start with an easy one:
Beer Can Chicken
Season the ouside of the chicken. Put your chicken on a beer can ,(the large opening between the legs and pull all the way down so the chicken is sitting on a standing beer can or cola can), full of low carb beer or chicken broth with spices in it. Put the can with the chicken on it standing up in a roasting pan and bake for 15 min at 450 and an hour at 350. It was very moist and easy to do. The hardest part was getting the can out of the chicken.

4 or 5 chicken breast
5 or 6 Tablespoons Mayonnaise
2 Tablespoons Lemon Juice
1 Tablespoon Vinegar
2 Teaspoons Salt
1 Teaspoon Pepper
How to Prepare:
Mix mayonnaise, lemon juice, vinegar, salt and pepper in a bowl. Pour over chicken. Cook on 350 for about an hour or until browning on top. I know this sounds strange but it tastes like KFC without the crust!!
Note: Some members go easy on the salt. It seems to be too salty. I go heavy on the pepper instead.

Heroin Wings
4 lbs. Chicken wings
1/2 c. butter
1 c. grated parmesean cheese
2 tablespoons dried parsley
1 tablespoon dried oregano
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon pepper
Preheat the oven to 350. Cut the wings up into drummettes and freeze the pointy tips for soup.
Combine the grated cheese and the seasonings. Line a shallow baking pan with foil. (Do NOT omit this step, or you'll be scrubbing the pan for the next 2 weeks!)
Melt the butter in a shallow bowl or pan. Dip each drummette in butter, roll in the seasoned cheese, and arrange in the foil lined pan. Bake for 1 hour. Kick yourself that you didn't make a double batch!
You can easily adapt this to things like chicken parts or even pork chops.

Hi I am so glad I found this link. I am getting ready to try Steve's recipe. I am soupose to fry chicken brest in EVOO. What is EVOO and where do I find it?
Can I use something else instead?

The only reason I use EVOO (Extra Virgin Olive Oil) is because it has a distinct flavour and it won't smoke when the oil gets hot...
Any good oil will do !!!!!

NOT FOR INDUCTION
Pecan Chicken
about 1 cup of finely chopped pecans - this varies with the size of your pieces of chicken
1 tsp salt (optional)
1 TBS parsley
1 egg white, whipped until frothy
3 or 4 boneless skinless chicken breast
mix the pecans, salt and parsley together. dry the chicken breasts with paper towels. dip chicken in crushed pecan mixture. Place on foil lined baking sheet that has been sprayed with Pam.
Bake 375 for 30-45 minutes - depending on thickness of breasts

Homemade Chicken Nuggets
2 boneless, skinless chicken breasts, thawed and cut up some
1 egg
1/2 tsp garlic powder
Any spices that you enjoy the flavor of
2 oz or so of cream cheese
1/4 cup parmesan cheese
Really, you can put just about anything in with the chicken to make the flavor you like.
I put all this in the food processor to make a chicken paste. Spoon out a nugget about 2 inches long by 1 inch or so and roll it in either flour, or white corn meal or make a mixture of crushed pork rinds, soy flour and parmesan cheese.
Drop them in hot oil. They will float around in there and you have to turn them over once to brown the other side.

This is one I tried recently and we LOVED it - what great flavor!
Butter Chicken (Indian)
Ingredients
1 onion (1/2 lb.), peeled and chopped
2 tablespoons chopped fresh ginger
1 fresh chili (about 1 oz.), rinsed, stemmed, seeded, and chopped
1 tablespoon salad oil
2 teaspoons garam masala
1 can (6 oz.) tomato paste
2 cups chicken broth
1/2 cup whipping cream
1 1/2 pounds chicken, cut into 3/4-inch chunks
1/2 teaspoon coarse-ground black pepper
Salt
1/4 cup (1/8 lb.) butter or margarine
1. In a 5- to 6-quart pan, combine onion, ginger, chili, and oil. Stir often over high heat until onion is lightly browned, 3 to 5 minutes. Stir in garam masala. Scrape mixture into a blender; add tomato paste and chicken broth. Whirl until very smooth. Pour mixture back into pan, add cream, and bring to a gentle boil over high heat (mixture is inclined to spatter). Reduce heat and simmer, stirring often, until reduced to 3 cups, about 5 minutes. Pour sauce into a bowl. Rinse and dry pan.
2. Mix chicken with pepper and sprinkle lightly with salt. Set pan over high heat; add 1 tablespoon butter and the chicken. Stir until chicken is no longer pink on the surface, 2 to 3 minutes. Add the sauce and simmer over medium heat, stirring often, until chicken is no longer pink in the center (cut to test), 3 to 4 minutes. Cut remaining 3 tablespoons butter into chunks and stir into sauce until melted.

Two different versions of "hot chicken salad"
Version #1:
4 cups cooked chicken breast meat
2 cups diced celery
1 cup slivered almonds
1 rounded tsp. salt (seems to me to need a bit more than 1 t.--you could start with that and then taste)
1 tsp. pepper
1/4 cup fresh lemon juice
2 cups mayo
2 cups grated sharp cheddar cheese
In large bowl, mix mayo, lemon juice, salt and pepper. Stir in remaining ingredients. Spoon into sprayed 9x13 casserole and top with additional cheese, if you like. Bake 20-25 minutes at 350, or until bubbly.
Version #2
2-3 cups chopped, cooked chicken breast
1/2 cup mayo
2 T. dijon mustard (don't skip this--it's what makes it delicious!)
2 cups grated sharp cheddar cheese
2 T. each diced red onion, red bell pepper
2 T. chopped parsley (I usually just use 1 T. dried)
8 slices of bacon, cooked crisp and crumbled.
Mix all ingredients in large mixing bowl. Transfer to greased 2 quart casserole and bake at 350 for 20-25 minutes, or until bubbly.
These are both big favorites in this household. #1, a variation of a Paula Deen recipe, is rich and comfort-foody. #2, while also rich, is tangy and flavorful!
Both can be assembled ahead and refrigerated until ready to bake.

I cant wait to try these! I need to start doing something with my meats beside garlic salt and pepper! I have always heard such good things about heroin wings!!

I use 6 boneless, skinless chicken thighs and 4 chicken breast tenders but you can use whatever chicken you want except don't use all white meat as it will be dry. Plop those in the crockpot on high.
Add:
1 tsp salt
1 Tbs thyme
1 tsp cayenne pepper
2 Tbs sage
1 tsp ginger
1/2 cup chopped onion
1 tsp dry garlic
1/4 cup veg oil
1/4 cup soy sauce
1 Tbs lime juice
Stir it around to coat the chicken, put on the lid and let it cook until the meat is done and falling apart.
This is a bit on the hot side and is excellent to use with lowcarb tortillas with cheese for a nice quesadilla.
