Since we no longer have our recipe link, I thought maybe I'd try to create a thread where we could post our favorite recipes. We should probably try to keep them in categories, don't you think. And maybe only one recipe per reply?

Ingredients:
4-oz cream cheese
3 eggs
1/3 cup cream
1/4 cup grated parmesan cheese (canned will work)
1/2 tsp. oregano
1/4 tsp. garlic powder
2 cups mixed italian cheese
1/4 cup low carb pizza sauce
1 cup of mozzarella cheese
Desired pizza toppings
Cooking Instructions:
Preheat oven to 375 Beat together cream cheese and eggs til smooth. Add cream, parm cheese,and spices and mix again. Spray oblong casserole dish with PAM. Sprinkle 2 cups italian cheeses into dish and pour egg mixture over it. Bake at 375 for about 20 minutes. Let stand for 5 minutes. Spread on pizza sauce, sprinkle 1 cup of mozarella cheese and pile with your favorite toppings. Then sprinkle with more parm cheese. Return to oven and bake til bubbly and browning. Allow to stand 10 minutes before cutting.
Remember that the carb count could change depending on your toppings. Also, I just use mozzerella cheese for both the crust and the topping. I don't really know what they mean about the mixed cheeses ... maybe provolone.

Thrown Together Casserole
1 lb. ground beef
1 can of cut green beans
1 can of crushed tomatoes
1 small can of mushroom pieces
salt, pepper and garlic to taste
2 cups of your favorite cheese, grated (I have tried cheddar and mozarella and they're both excellent
Brown the ground beef with spices, to taste. Drain the ground beef and put back into the skillet. Add the green beans (drained), the tomatoes with juice and the mushrooms (drained). Cook for just a bit until all ingredients are heated. Mix half the cheese into the casserole, put into a baking dish and sprinkle the rest of the cheese over top
Bake at 350 for about 20 minutes until the cheese is good and gooey.
A good substitution is to use tomatoes w/ jalapenos. That is the only way I make it now.

8 oz. cream cheese, softened
1/2 cup sour cream
3 eggs
2 cups shredded Mexican-style cheese
1 T. Fajita, Taco or Burrito seasoning (optional)
1 pound lean Ground Beef
1 cup salsa
1 4-oz. can Minced Green Chilis
Pepper Flakes
Preheat the oven to 350 degrees.
Brown the ground beef, drain the fat and add 1 cup salsa.
Mix the cream cheese, sour cream, eggs, 1 cup cheese and seasoning (optional).
Pour about half of the egg/cheese mixture into the bottom of a sprayed 8” or 9” square baking dish. Add the ground beef, a layer of shredded cheese, a layer of minced green chilis and then the rest of the egg/cheese mixture. Sprinkle a little of the shredded cheese on top and a few pepper flakes on top of the cheese.
Bake for about 45 minutes.
9 Servings
6.3 carbs per serving
373 calories per serving

10 ounce frozen, chopped spinach, thawed & drained
1 pound hamburger
1/4 cup chopped onion
1/8 teaspoon garlic powder
1/8 teaspoon oregano
1/4 tsp minced garlic
1 cup Carb Options spaghetti sauce
8 ounces cream cheese
1 egg
1/8 teaspoon pepper
8 ounces mozzarella, shredded
2 tablespoon parmesan cheese (I used the kind in a can)
Brown the hamburger with the onion; drain off fat. Mix in the garlic powder, spices and spaghetti sauce; season to taste and heat until bubbly. Meanwhile, soften the cream cheese in a medium-size microwaveable bowl for about 40-60 seconds. Stir until creamy; beat in egg and pepper with a spoon until well mixed. Blend in the spinach. Spread half the meat mixture evenly in the bottom of a greased, 8 x 8" glass baking pan. Spread spinach mixture over the meat; top with the mozzarella, then the rest of the meat (it may not completely cover the top, but that's ok). Sprinkle with the parmesan cheese.
Bake at 350 for 20-25 minutes or until bubbly. Let sit 5 minutes before slicing.
If cut into 9 pieces, 4.5 carbs per serving. If 6 pieces, 6.5 per serving.
