I've only found it in health food stores. Not exactly sure what part of the wheat it is, can't help there, and don't know if there is anything you could use as a substitute.

"Wheat gluten, also called seitan (pronounced /ˈseɪtæn/), wheat meat, Mock Duck, gluten meat, or simply gluten, is a food made from the gluten of wheat. It is made by washing wheat flour dough with water until all the starch dissolves, leaving insoluble gluten as an elastic mass which is then cooked before being eaten."

I think it makes the waffles taste more like waffles without all the carbs. It does have some carbs but spread out over the recipe it's minimal.

I have a waffle iron that makes 4, 3x3 square waffles at a time and I figured out they are 1 carb each.

I'm thinking that they wouldn't come out so great if you try to cook them like pancakes. It seems like the cheese needs all the nooks and crannies to get browned and toasty. If you try it like pancakes let me know how they turn out.

I buy the wheat gluten in a box at my grocery store. I think it's Bob's Red Mill or something like that.

I've thought about trying them as pancakes but never got around to it.

I find that most large grocery stores here have VWG. I usually find it either on the baking aisle with all the other Bob's Red Mill flours and mixes (they are in celophane bags, here), or sometimes on the organic/health food aisle, if the store has one.

Hey..
You guys do know where I live, don't you?? totally HICKS VILLE!! I live in Massey which is on top of Lake Huron.. Population just under 1000....
AND YOU WANT ME TO FIND GLUTEN?????
I am lucky to find myself and my princess food,let alone GLUTEN.....

When I ask for some minced meat at the local grocery store, they ask me if I want Moose, Deer. or Steer??
Someone said they are now carrying Beefalo meat as well.....

When we go to Sudbury the next time, I will see about getting a waffle iron before trying to get gluten...

We went to Wall-Mart and I looked at waffle irons.. I found one for only $19.95 but when I tried to open it up to look inside, the cover broke off in my hands.. Needless to say, I walked away.. We are going to Sudbury a few times from now to the end of the month and I will look for an iron at one of the stores.. I would like one that can at least make 4 waffles at a time..

Then, and only then, will I buy the gluten..


Seriously... Our local butcher asked me if I wanted 10 packages, one pound each, of minced Moose... Hey, why not.. It sure makes a difference in taste when I BBQ a Moose Burger.....

Hi Steve. My waffle maker is from back in the day. Heavy and still works like a charm. They don't make things like they used to!

Your moosemeat reminded me of an old kid song about being hungry... "I could eat a goose-moose burger, 15 pickles and a purple plumb!"

Not sure what a goose-moose burger would be like...or a moose burger for that matter.

Maybe you already know this recipe, but I couldn't find it.

Mozzarella pancakes.

Mix in blender:
1 ball of mozzarella (here they are 125 gram which I think is about 4.4 ounce)
3 large eggs
1-2 tbsp butter or oil (I always use coconut oil for everything)
sweetener and a little cinnamon to your taste

Use a small pan (9-10 inch) and bake slowly, you can get 4-5 pancakes from this recipe. I've tried out a lot of pancake recipes over the years and these probably are the closest to the real thing as you can get.

Many years ago we went to a convention here in Ohio for outdoor enthusiasts and they had a buffet with every kind of wild game you could imagine. Even lion from Africa and all the ones we've talked about. At that time we had about a dozen pet raccoons who came to our back porch every night where we fed them dog food. The neighbors REALLY loved that, let me tell you, but we really enjoyed them. Anyway, Don even ate some raccoon. I couldn't believe he did that. I kinda wimped out. All I had was wild turkey, wild pig and some rabbit I think it was.

We've kind of hijacked this thread, haven't we?

Tami, if you haven't yet discovered Linda Sue's site, you MUST check it out immediately:

Linda has tested and photographed everything on her site, and lists very specifically the nutritional info, including gross and net carbs. She even indicates what is Induction safe and what isn't. It is a real treasure for the low carb cook!
