Since we no longer have our recipe link, I thought maybe I'd try to create a thread where we could post our favorite recipes. We should probably try to keep them in categories, don't you think. And maybe only one recipe per reply?

Broccoli Cheese Soup

Easy and Yummy!

2 cans beef broth OR 4 cups water and 2 cubes Knorrs Beef Bouillon
About 4 cups of fresh or frozen broccoli
About 2 cups grated cheddar
4 oz. cream cheese - softened

Cook the broccoli in the broth. Take out the broccoli and put it in your food processor along with the cream cheese. Blend until creamy. Put the broccoli back in the broth and add the grated cheddar. Stir on low so the cheese melts really well.

Chicken White Bean Stew

Oh my gosh good!

About 4 chicken breast - boneless and skinless
1 14-15oz can petite diced tomatoes
1 14-15 oz. Can navy beans (drained and rinsed)*
1 tsp garlic powder
2 cans chicken broth OR 4 cups water and 2 cubes Knorrs chicken bouillon
2 tbs Butter

Melt the butter in a large soup pot and put in the chicken. Cook the chicken til browned and done. Take out the chicken and cut it into bite sized pieces. Put the chicken back in the pot and add the broth, tomatoes, navy beans and garlic. Simmer until hot.

*This recipe would not be for someone just getting started on induction.

Best Coleslaw

(This is my go-to cole slaw recipe even when I'm not low carbing!)

1/2 c. mayo
1/2 c. sour cream
1.5 T. apple cider vinegar
1.5 tsp. prepared mustard
1/2 tsp. salt
1 packet Splenda
1 t. celery seeds
1 large bag shredded cabbage

Place all ingredients except cabbage in a large zip-lock bag. Mush it around until well-blended. Add cabbage and shake well. Seal bag and place in the refrigerator until ready to use. (The longer the flavors blend, the better it tastes.)

The dressing mixture yields quite a bit of dressing, so if I can only find the small size bags of cabbage, I buy two.

Broccoli Salad

5 cups coarsely chopped broccoli flowerets
1/4 c. chopped red onion
6 slices bacon, cooked and crumbled
1 c. coarsely shredded or diced sharp cheddar cheese
1 c. sunflower kernals

Dressing:
1 cup mayo
3 packets Splenda
3 T. cider or wine vinegar

Place dressing ingredients in large zip-lock bag. Seal and mush around until well mixed. Add salad ingredients, except nuts, and shake until well blended. Seal bag and store in fridge. Mix nuts in just before serving.

This recipe is delish! It's best if it has several hours or overnight for the flavors to blend.


(P.S. The original recipe contained a cup of raisins. Sometimes I will add the raisins for everyone else after I've removed some for myself. They do add a nice tang.)
