My mothers meatloaf recipe uses grated apple instead of breadcrumbs, its incredibly delicious and ultra juicy, but carby. Other meatloaf recipes call for breadcrumbs, what would you suggest swapping breadcrumbs out for? Flax meal? I dont have carbquik flour and am not dying to buy a box just for this...

I haven't tried a LC meatloaf, but I believe that many people use parmesan cheese and eggs to bind the meatloaf!
There are probably some recipes on this board, if you did a search!

I've heard about people using crushed pork rinds, but I never tried it.

I actually just left them out altogether, and it was fine. I did use eggs, though, but they're in the original recipe anyway.

I use an egg and a handful of raw wheat bran, or 1/2 cup cooked quinoa. Nice moist meatloaf either way!

THanks for all the suggestions. I ended up using egg and grated parmesan (the real stuff, not the green can stuff) and it came out delicious and moist. I think the 1/4lb of pork sausage i added to the mix helped keep it pretty moist too ;D
