Cheri's Creamy Southwest Soup
1 lb ground beef
1/2 cup chopped onion
2 cloves garlic, minced
1 T. cumin
1t. chili powder
1 8 oz block cream cheese
2 cans (I used 14 oz. cans--recipe didn't specify) broth (I used chicken)
2 cans Rotel tomatoes and chiles
1/2 cup heavy cream
In stockpot, brown beef with onion and garlic. (I did not drain because I want the fat, but you could drain after this.) Stir in spices. Cube cream cheese, add to mixture in pot, and stir over low heat until cream cheese is melted. Add broth and Rotel and bring to a boil. Reduce heat to low, add cream and heat through.
This is GOOD stuff--my non-Atkins son ate about 3/4 of the pot!

I was going to make this but had the pork sausage thawed so made the creamy nacho soup - used dried cilanthro and followed her directions for suggested changes (place tomatoes in at end and use shredded cheese).
It was spicy, but OMG was it good - my 12 yr old boys LOVED IT!!! And I mean LOVED IT!!!

Sounds fantastic--I'm going to try that next. I absolutely LOVED the southwest soup!
One question for you, though--did it taste like cauliflower? Because I really don't much like cauliflower, and I think I might skip that ingredient in the nacho soup, if you can taste it.

Sure didnt taste like cauliflower - and I really didnt bother getting it smooth - nothing wrong with a chunky soup ... but for you those chunks of cauliflower might be too much.

the creamy southwest soup sounds good. May have to try it. I am not a huge steak fan so always looking for great burger recipes. the only thing that got me back into my diet (besides being fat) was that we have alot of great tasking elk where the roasts and steaks are sooo tender. I have just hit my 2 weeks of being desugared. Never craved my favorite m & m's that I ate daily. haven't been in to the licorice in my cupboard or the ice cream in the freezer.
