The buffalo wings I've been cooking for years are in fact very low carb with no alteration.
N.b. these are quite hot, but are just like the Buffalo wings I ate in various Manhattan bars when I travelled there from London. Happy days!

For two people:
Net carbs about 4g per serving (5.5g - 1.5g fibre)
800 g chicken wings
2 tbsp Tabasco sauce
1 tbsp white wine vinegar
2 tbsp butter
4 celery sticks, cut into batons
100g blue cheese (e.g. Dolcelatte, Saint Agur, etc.)
50g real mayonnaise (NOT light mayo!!)
2 tbsp sour cream
Salt
Pepper
1. Chop the whole wings into their three pieces and discard the wingtip bits.
2. Season the chicken wings on a shallow baking tray
3. Bake wings in a hot oven, say 220C (fan oven), for 15 mins each side.
4. Meanwhile, make dip by blending blue cheese (e.g. ), mayonnaise, and sour cream.
5. When wings are crispy and brown, remove from oven and leave to stand while you make the sauce.
6. To make sauce, add Tabasco, vinegar, and about half to one tsp of salt, to a pan and heat 'til just about boiling. N.b. it needs to be quite salty for the authentic taste!
7. Take off the heat, add butter to pan, and stir in to cool the sauce quickly so as to avoid separating the butter.
8. Plate the wings and immediately pour over the sauce.
9. Serve with celery sticks and blue cheese dip.
