Since we no longer have our recipe link, I thought maybe I'd try to create a thread where we could post our favorite recipes. We should probably try to keep them in categories, don't you think. And maybe only one recipe per reply?

Bacon Cheeseburger Quiche
lb. lean hamburger
2 tbls. minced onion
5 slices crisp bacon (crumbled)
3 eggs
1/2 cup mayonnaise
1/2 heavy cream
8 oz. shredded cheddar cheese
garlic powder to taste
pepper
Brown hamburger in a skillet with onion. Remove and mix in a
bowl with bacon, breaking up any large clumps. Drain well of
excess grease. Press into bottom of a deepdish pie pan and set
aside.
Preheat oven to 350 F. Combine remaining ingredients in bowl
and whip up well. Pour over meat mixture. Bake about 40
minutes, until browned and set. Cool about 10 to 15 minutes
before slicing.
Serves 6 ; 2g carbs per serving.

Mock Danish
Ingredients:
2 oz. cream cheese
1 large egg
1 packet Splenda
1 tsp vanilla flavoring
How to Prepare:
Soften the cream cheese in the microwave for 20-30 seconds. Add the egg, Splenda, and vanilla and beat well until completely blended. Nuke for an additional 45 seconds - 1 minute depending on your micro. You want it to look like custard not scrambled eggs. Stir and Add a dash of cinnamon and a pat of butter on top...You can eat it without the cinnamon but that is what makes it taste like a Danish.

One minute muffin:
serving size: 1
1/4 cup flax meal
1/2 teaspoon baking powder
1 packet splenda
1 teaspoon cinnamon
1 large egg
1 teaspoon butter
Put dry ingredients in a coffee mug.
Stir.
Then add the egg and butter. Mix.
Microwave 1 minute or more. Take out, slice, butter, eat.

Flaxmeal Cinnamon Muffins
6 Tbsp. oil
3 large eggs
1/4 c. vanilla SF syrup
2 Tbsp. water
1 Tbsp. vanilla extract
1 cup flax meal
1/2 tsp. baking powder
1/2 tsp. baking soda
2 Tbsp. cinnamon
Mix oil, eggs, SF syrup, water and vanilla. Add dry ingredients and mix well. Let sit five minutes. Divide evenly into 12 cup greased muffin tin. Bake at 350 for 12-15 minutes (12 is enough for me.) Remove immediately. Store in refrigerator or freezer.
May add cloves to the recipe. You can use 6 Tbsp. water and some Splenda if you don't have the vanilla syrup. (This will raise the carb count somewhat.)

Preheat your waffle iron.
1 8 oz. package cream cheese, cubed
3 eggs
2 pkt. Splenda
1 tsp. or pkt. Stevia Plus
1 tsp. baking powder
1/2 tsp. baking soda
1/2 cup vital wheat gluten
1 tsp. cider vinegar
1/4 cup cream
1 cup shredded Mozzarella cheese (yep, cheese in your waffles!)
Put all ingredients into a food processor; process until smooth. Open processor and scrape down the sides with a spatula, then process another 60 seconds. The batter will be VERY thick - do NOT thin it down!
Place a heaping tablespoon (the kind you eat cereal with, not a measuring spoon) of batter into each waffle section of the iron and cook as you would regular waffles.
Makes 7 large waffles, approx. 3.6 carbs each
You can reduce the calories by using part-skim ricotta cheese in place of cream cheese and Hood's LC milk in place of the cream, if you like.
These are awesome waffles. Can be frozen and popped into a toaster to reheat.

Oh snap! Those waffles are fantastic!
Linda..by large waffle do you mean the whole surface of the waffle iron? My waffle iron make 4 small square waffles at a time.
I had them this morning with SF maple syrup and butter. Total yum.

Donna, did you use the Stevia? I don't like it, and don't have any. Would additional Splenda work as well?

Low Carb Breakfast Balls
2 lbs bulk pork sausage
1 lb ground beef
3 eggs
2 T. dried onion flakes
1/2 t. black pepper
1/2 lb grated sharp cheddar.
Mix all ingredients in electric mixer until blended. Form into 4 dozen 1 to 1 and 1/2 inch balls. Line a baking sheet with sides with aluminum foil (unless you enjoy scraping cheese and grease until your arm falls off!) (I used non-stick foil.) Place balls on foil and bake for 25 minutes. (Mine were done in 20.) Once cool, you can place individual portions in ziplock sandwich bags and freeze. They reheat well in the microwave.
This is a tasty breakfast for those of us who don't like eggs, and it's handy to have some stashed away in the freezer for busy mornings.
4 balls is 1.1 grams carbohydrate.

Hey Ladies!
Iam just starting to Lo-Carb and am wondering when the recipes call for "cream" what exactly is that? The whipping cream you buy and mix to thicken? Thanks!!!!

Yes. It is whipping cream.
I really don't know what a "large" waffle is. Just assume that 1/7 of the batter equals one large waffle, I guess.
I use s/f syrup.

I know you are probably tired of hearing me ask this question but do these taste eggy at all? I would like to try them but so many things made low carb like this taste eggy to me.

4me..no, they are not eggy at all. I know what you mean. Seriously, they are delish! I toasted one and put butter on it and had it with my eggs and bacon yesterday. This recipe is a 2 thumbs up!
