I was watching Rachel Ray and she had a great recipe so i thought i would share. I plan to make it this weekend.
Take large prawns and de-vein them, then stuff fresh sage into the cavity where the vein was, then wrap panchetta around it and cook in olive oil. Not sure how panchetta is cured but you could use nitrate free bacon i am sure.
Anyway i plan to make it Thursday when i have some time off, but if anyone makes it first please let me know your thoughts. My goodness I want this now!

SO this was good, but i thought it would have more flavor. I think i might try something different or use more sage. I work with chefs and one thought using basil instead of sage and another thought of using a Similar but different meat that panchetta but for the life of me the name has escaped me. I wouldn't mind adding brie cheese

I have some fresh basil, might have to give this a try. Wonder how it would be wrapped in proscuitto? I don't know if I could find panchetta.

I have everything bought to try this for dinner tomorrow night including adding brie cheese. I couldn't find prawns but bought some very large shrimp. I even found panchetta. I have sage growing fresh outside. I'm looking forward to giving this a try.

I made this tonight and it was good but the brie just melted right out. I used 2 sage leaves on some and thought there was a nice flavor.
