Steve requested the waffle recipe. He says he is getting tired of eggs. Who wouldn't without BACON ???

Amazing Waffles
--------------------------------------------------------------------------------

Preheat your waffle iron.

1 8 oz. package cream cheese, cubed
3 eggs
2 pkt. Splenda
1 tsp. or pkt. Stevia Plus
1 tsp. baking powder
1/2 tsp. baking soda
1/2 cup vital wheat gluten
1 tsp. cider vinegar
1/4 cup cream
1 cup shredded Mozzarella cheese (yep, cheese in your waffles!)

Put all ingredients into a food processor; process until smooth. Open processor and scrape down the sides with a spatula, then process another 60 seconds. The batter will be VERY thick - do NOT thin it down!

Place a heaping tablespoon (the kind you eat cereal with, not a measuring spoon) of batter into each waffle section of the iron and cook as you would regular waffles.

Makes 7 large waffles, approx. 3.6 carbs each

You can reduce the calories by using part-skim ricotta cheese in place of cream cheese and Hood's LC milk in place of the cream, if you like.

These are awesome waffles. Can be frozen and popped into a toaster to reheat.

Thanks Linda..

Is there a substitute for the wheat gluten?? I think (I am not sure) it might be very hard to find in my neck of the woods.. We are going to Sudbury next week and I will try the "Bulk Barn" as well as Wall-Mart.. Should they have it, I will buy a ton of the stuff..

If I just add some more Splenda instead of Stevia, that should do it....

One last question.. I remember reading somewhere a recipe that uses "almond flour" and I was wondering if it was for waffles?? Can't remember or find it...

Steve, I live in a rather rural area and was very surprised to find the Vital Wheat Gluten at my grocery store. The first time, it was in the baking section. The second time, it was in the small natural foods section they have. I have also found it in our local health food store. I bought a couple of boxes of it when I did finally find it because between the first and second times I bought it, I did have trouble finding it...I guess everyone sold out and it took a while to get it back in stock. I don't know if there would be a substitute or not. As she said, it might not be as hard to find as you think. Maybe on-line if you can't find it in a store.

I went to Espanola on Friday where they have 2 huge grocery stores and both stores don't carry wheat gluten.. Actually they have a gluten free flour..
I was asked why I need it and I told them to make waffles.. They told me to buy the frozen waffles and toast them..
BOY, ARE SOME FOLKS EVER IGNORANT WHEN IT COMES TO LOW CARB....

We are going to Sudbury next week and I will try the Wall-Mart as well as the Bulk Barn there.. If they don't have wheat gluten, I might return the waffle iron and forget about ever making waffles.......

Don't look in the area with the rest of the baking goods. This is always in a health food or natural food section of the stores where I shop.

I called up the "Bulk Barn" in Sudbury and sure enough they have Wheat Gluten..

We were supposed to go there this Tuesday but one of our very very close friends died suddenly and we are tied up with that.. We are going to Sudbury next Tuesday when I will be visiting the Bulk Barn and stalking up on that stuff.....
Till then, we will continue eating eggs for breakfast with NO BACON !!!!

There was a guy in the paper this morning that both Don and I worked with and was on a golf league with Don. He was only 62.

I finally bought some wheat gluten as well as almond flour when we went to Sudbury on Tuesday.. It is the only place I can get it and that was at the "Bulk Barn"..
NO ONE TOLD ME THAT BOTH FLOURS ARE FRIGHTFULLY EXPENSIVE..
The wheat gluten was $25.00 a kg. and the almond flour was $28.00 a kg.
I walked out of the shop with a small bags of each and it cost me well over $50.00 to make a few waffles and a few pancakes..
Oh well, if we like it, then it is well worth it...
I'm not complaining but just stating..

I don't remember paying anything close to that.

I just saw 6 pounds (2.7 kg) on-line for about $25. Would it be twice as much in Canada?

That does sound cheaper than what I paid however I have enough for now.. I don't intend making waffles more than once a week and pancakes also once a week..

I made almond pancakes for breakfast today and we both loved it with some S/F maple syrup.. What a lovely treat!!!
The recipe is extremely simple and fast.. It only calls for one cup of flour..

When I need another batch of either wheat gluten or almond flour, I will check it out on line however I think the shipping could be tricky.. Will they allow that to be shipped to Canada?? And how much will the shipping and duty cost?? It could be cheaper to pay $25.00 a kg and have it.......

I tried making the waffles according to the recipe and they were not bad but nothing spectacular..

I was wondering if there is a formula to substitute regular flour with wheat gluten.. I tried the regular flour recipe once because I didn't have the wheat gluten and we enjoyed the waffles very much, however now that I have the proper flour, is there a method of exchanging flour for the wheat gluten??

I also tried making the pancakes with the almond flour and they were simply delicious!! I MEAN DELICIOUS!!!! Very simple to make as well..
Have you ever tried making pancakes using almond flour??
