Has anyone ever given this a try?
If not, I'll report back on how it is, but was wondering if anyone tried it and liked/didn't like it.

I just finished up the last of something similar I made on Monday. I buy the cheapest beef, this time it was a chuck roast, put it in the crock pot with some canned pasta sauce from Trader Joe's and some left over crushed tomatoes, garlic salt and some Trader Joe's pasta seasoning and let it cook till the meat shredded. I had some that night, then the next day took off a lot of the fat. Served with some grated parmesan and salad it was wonderful. A nice alternative to chile verde and very simple.

I make Italian Roast beef all the time. It is wonderful to make for big family gatherings.
I use a bottom round roast and some seasoning - salt - pepper - onions - whatever because it will cook down.
I put my meat and seasonings in the crock pot the night before I want it - late at night before I go to bed on low.
In the morning I check it and when it falls apart I shred it and add tomatoe paste, diced seasoned tomatoes, italian seasoning mix, garlic and whatever italian seasoning you want. Let it cook down a bit and you are ready to serve.
I buy fresh baked buns when I am serving at family gatherings. And I usually do 2 roasts for a family gathering. YUM!

Just wanted to update... this was yummy!
If I could ever find low carb tortillas, I would probably wrap this beef in it. This is a great way to cook cheap roasts that you find on sale. It took on a very, very good flavor, and was even better when I reheated it and had some for breakfast today after sitting in the refridgerator all night.
