I agree patty, much larger than a normal muffin.

HA! yes they can be a bit odd if you aren't used to them. The flax seeds have amzing fiber though and these are good for you. I wasn't sure at first if mine was done also cooked for 1.5 min but once it cooled for a second I knew it was good to go. I ran out of cinnamon but i was thinking i might try a garlic fried onion combo to eat with dinner at some point.

I confess Marci..I didn't follow the recipe really. I put the flax, baking powder & egg in there but not the cinnamon and splenda. I actually put garlic powder in it instead & once it had the wonderful melted butter on it, it was close enough to garlic bread for me! lol

Yes, I should have definitely only eaten half! I thought i was going to explode afterward!

I'll have to try the "garlic bread" style.
I prefer these in a wider-bottom container. The 2 cup pyrex measuring cups or chowder bowls work well. When I dump them out, sometimes I'll "frost" them with cream cheese and cut into wedges. Yum!

Sammy that's a GREAT idea. I never thought of that! If you make the sweet version, how wonderful would a cream cheese frosting be (cream cheese, splenda & heavy cream)?!?!?! Ooh I'm excited..this could be the beginning of something dangerous LOL

I need to find the original recipe. I recall these were very good for fiber, but LETHAL for overdoing it, if you could not restrain yourself to eating 2 of less per day. I know I always used SF syrup.

I am only doing 1 or 2 a week at most. They are good for you but you are right they can stall you if you are not careful.
I have a dress to get into no stalls aloud.

I tried making one from memory a few days ago and i use 1/3 cup flax, very dry and flaxy :-)

I just had one of these for the first time and I am FULL. The texture and color is similar to grainy heavy brown breads that I adore.
While I was eating it with 1 oz. of cream cheese on top, it was yummy. But a few minutes after eating, I feel bloated and there is a bit of an unusual (to me) aftertaste. Next time, I think I will take the suggestion of stopping at just half a muffin. I wonder how these store and reheat?

An hour later I am fealing and hearing a LOT of stomach churning? hmmmmm

I think the single serviing sizes are a great idea. You make one and that's your limit!

I just made one for breakfast to try and am amazed at the size. Definitely two portions at least in one of these. Love it! That means I can make it in the morning and take it to work and its my daily ration . And - no more stale muffins in the fridge.

Ohh yea!!! How come no one told me about these before?? *hands on hips*

I used SF cookie dough syrup cause it's all i had opened - but think i'm gonna stick to splenda - how much should i make for a drop of the liquid splenda?

what part of the ingrediates do you guys think is the staller? This was more filling than the 3 eggs i eat for breakfast - as a matter of fact, since i ate a whole one, i'm concidering this my lunch.

I have no issues with the texture - was kinda worried about that since it was mentioned so am very happy.

Karen - how much garlic powder do you put in? And does that only replace the cinnamon or what?

I am not the pickiest of eaters - and as long as there is no soy i can pretty much eat it! So thanks guys for the posts that drew me here! Something easy to add to my recipies *yay for easy!!!!!*

Jennifer, I have to admit...I'm the worst when it comes to recipes because if I'm playing around w/ something at home, I don't measure a darn thing. I made it with just the flax, egg, baking powder & shook some garlic powder into the mix. I left out the splenda & cinnamon completely.

How would I cook these without a microwave, in a large muffin pan? How long?

I don't use a microwave anymore and always wonder about the recipe change.

Should you melt the butter? I did because I didn't see how you'd blend it in otherwise.

And I sprayed the mug with Pam. Is that necessry?

I was amazed at how high it rose in the cup.

While I was at it I made up a few extra dry ingredients and put them each in a separate sandwich bag.

For newbies a hint: It is best to keep flaxmeal in the freezer. It can turn rancid otherwise.

And if you are using bulk splenda instead of packets, use about 2 teaspoons.
