My friend made this for a dinner party I threw friday night. She served it with whipped cream and fresh berries. It was excellent. Here's the recipe:

Wow. Looks fantastic. I navigated from that page to the page with the low-carb lemon curd, which also looked fantastic. It would make a great filling for the cake, I think!

It was a lovely cake. I saw the lemon curd recipe too, I WILL be making that, soon! (as soon as my sweetzfree comes in the mail). THe cake was great with whipped cream and strawberries, but would aslo be fantastic with lemon curd and whipped cream. I saw coconut flour at the healthfood store yesterday but didnt buy any as I was in there looking for something else entirely.

My friend says that since its got so much eggs to store in teh fridge, she also says she freezes individual slices and enjoys them for breakfast (plenty of eggs in there to fill'er up). Finally, she said that its best to keep it in an airtight container as days go by bc the cake will absorb moisture and become more dense. She uses xytitol (sp?) as a sweetener.

I would have no qualms serving this cake to non-atkins guests and they'd be none the wiser.


i just had an idea -- if i made key lime curd instead, think of it! coconut and key lime layer cake... OOOOHHHHHH
