Tiny’s Breakfast Casserole

Ingredients:

1 pound sausage, ham or bacon (precooked) ***(for Induction, sausage is probably best choice, use fresh loose sausage that has no fillers or additives) (also can skip meat and add more veggies)

-- 2-3oz each grated cheeses *** (sharp, Monterey jack and mozzarella) (can switch cheeses around or add less if do want it to be as cheesy) Save a little cheese to sprinkle of top ****** can also substitute one cheese for other similar ones or just put more of one or the other

-- 8 eggs, lightly beaten

-- 1 cup of low carb veggies (precooked) ***(some choices could be- spinach, mushrooms, peppers, broccoli, cauliflower, squash) use your imagination can combine ½ cup of two different types

-- 1/4 cup heavy cream

-- 1 tsp salt

-- pepper to taste

-- 1 tsp dry mustard

 

Preparation:

Great Easy Recipe to make on the weekend and have for breakfast throughout the week. Reheats great, can freeze also. Enjoy! Combine meat, grated cheeses and vegetables of your choice in a buttered baking dish. Combine eggs, heavy cream, salt, pepper and dry mustard, and pour over the ingredients in the baking dish. Bake for 30- 45 minutes at 350 degrees or until knife comes out clean when inserted in the middle. Very easy and convenient to have each morning for breakfast for the week. Can also be eaten for lunch or dinner.
