No Bake Chocolate Cookies
Ingredients:
- 2 cups splenda
- 1/2 cup cocoa
- 1/4 cup cream
- 1/4 cup soy milk
- 1/4 cup butter 1/4 cup lc peanut butter (or almond butter)
- 1/4 tsp salt

2 cups chopped nuts. I used almonds, walnuts, and macadamias. (You could add coconut as a variation also) |
Preparation:
This was adapted from a recipe using oatmeal, by a friend. I waited until off of induction for this treat. Blend all ingredients except the nut mixture in a saucepan and heat to a boil, on low heat, stirring constantly. Boil 2 to 3 minutes. Working quickly, add the chopped nuts. With a spoon, drop onto wax paper and cool. Put in the freezer to harden if you are in a hurry. Enjoy! I usually make a double batch and keep them in the freezer. (Very low in carbs, depending on the type of nuts and size of the cookie.)
