Chicken Rotel

Ingredients:

4 chicken boneless chicken breasts

1 can of Cream of Mushroom soup

1 small onion chopped

3 cups of shredded sharp cheddar cheese

2 cans of diced rotel (hot or mild)

 

Preparation:

Broil your chicken breasts until done. Careful not to over cook !! While chicken is cooking, in a pan, pour your cream of mushroom soup, chopped onion, 2 cups of cheese, and one can of the rotel and only the tomatoes out of the second can of rotel. (one can no juice). Allow to melt in saucepan slowly...stirring frequently. As chicken comes out of oven, cube it and add to mixture. After all together, pour into a casserole and top with the remaining cup of cheese. Bake for about 25 minutes on 300. (or until bubbly) Great for a meal and warms up well in microwave. For those with kids or spouses not watching carbs...serve with rice for a complete meal. Serves 4 to 5
