Cheesy Garlic Zucchini

Ingredients:

  • 1/2 T. Olive oil
  • 1/4 t. Minced garlic
  • 1/4-1/2 t. Mrs. Dash
  • Garlic and Herb Seasoning
  • 1 Small zucchini, peeled
  • 1/2 Roma tomato, chopped
  • 1/4 c. White cheddar, grated
  • Salt and Pepper to taste

 

Preparation:

With a potato peeler peel long, thin strips from the zucchini; work your way down to the rind. Save rind for use in other recipes. The strips should resemble "noodles". Heat 1/2 T. olive oil in a skillet on medium heat. Add 1/4 t. minced garlic and stir to distribute. Add zucchini "noodles", Mrs. Dash Seasoning, salt, and pepper. Cook and stir until zucchini is soft. Turn heat to low and add chopped tomato and 1/4 c. grated white cheddar. Cook until cheese begins to melt; do not burn cheese. Remove from heat and serve.
