2 tsp olive oil
2 tsp butter
1 tblsp lemon juice
1 tblsp minced fresh parsley
2 tsp dijon mustard
1/4 cup chicken broth
3 tblsp chopped up green onions
Flatten the chicken to about 1/4 inch. Season with salt and pepper. Brown chicken in the oil and butter for 3-5 mins on each side til juices are clear. Remove and keep warm. In same skillet, mix the lemon jice, parsley and mustard til blended then whisk in broth and green onions. heat thruough. server over the chicken. 1 carb per serving with 169 calories per serving and 6 grams fat.
